2013, A Year in Review - The Second Half - E.C. and A.E.C., Part 3

cakelava.com
We're having a blast looking back on some of our favorite cakes from 2013 and hope you're enjoying the view! Today, we're exploring cakes made during the months of August and September, following the release of our book Extreme Cakeovers, A.E.C. (After Extreme Cakeovers). We'll devote some time to the eventful month of July and finish the last few months of the year in Part 4. Here is Part 1 and Part 2 of B.E.C (Before Extreme Cakeovers), if you missed the previous posts.

The cake (shown above) we chose to introduce this period of time was a 4 foot tall gold, pink, and white wedding cake. It was made in September and combines some trends and design elements we worked with prominently during this time - wedding cakes that were yellow or gold, beautiful handcrafted flowers, and towering, 3 to 5 feet tall. During the latter half of 2013, Rick was regularly dedicating many hours each week to making gorgeous handcrafted flowers. It was clear that romance was back, elegant and opulent designs were hot, and brides wanted to go bigger and more eleborate, and it kept us very busy!

Before we jump into the After Extreme Cakeovers (A.E.C.) months, we'll look at July, the defining month which divided 2013 in half. Rick and I took the month of July off so we could enjoy one of the most exciting times in our lives - our book's release!  Extreme Cakeovers: Make Showstopping Desserts from Store-Bought Ingredients was released on July 9, 2013. It was a project we began in 2011 with our publisher Clarkson Potter (Random House), and we felt a huge honor to work with a publisher of some of the biggest names in cookbooks - Martha Stewart, Bobby Flay, Giada DeLaurentiis, Ina Garten, Rachael Ray, and more! From the beginning, we put everything we had, and more into the book, and even kept our shop open while writing it! Were we crazy? Just a little...

The morning of our book's release, Hawaii News Now's "Sunrise" show aired a segment with Rick and I talking about the book with Anchor Grace Lee. Rick demonstrated his Aloha Shirt cake in their studio kitchen. Click the link to watch the "Sunrise" TV segment.

Like many authors, we "stalked" our book at the local Barnes and Noble and independent bookstores. This photo was taken at the Ala Moana Barnes and Noble, where our book was displayed prominently. I can't explain what a rush it is to see your book on store shelves for the first time!

We filmed a segment at KITV, (ABC) which you can watch here.

A special Apple only iBooks version of Extreme Cakeovers was released. It offers more interactivity than the other ebooks. You can see the Behind the Scenes at the Extreme Cakeovers iBooks photo shoot on The Recipe Club's (Clarkson Potter and Ten Speed Press) website, and order the iTunes book here.

The book has 40 cake recipes, all made from store-bought products. One of our favorites is the Sushi Platter cake.

If you want to learn more about the book, check out the Official website for Extreme Cakeovers.

Boston classes:

As if releasing a book wasn't enough, also during July, we flew to Boston for a week where Rick taught two cake decorating classes to students at The Cake World. It made for an eventful month and a nice break from making cakes! Shortly after returning from Boston, we posted about our experience and a number of photos taken during the classes. You can see it here.

In Part 2 of our review, I mentioned one of the trends was requests for "incredibly complex sculpted vehicles"(air and land). I'll add, sea vehicles (like a fishing boat) as well. This Monster Truck was made for Stylen's birthday. The entire body and its gigantic wheels were sculpted out of cake and the decorations were handmade and painted by Rick.

We adored the yellow and pink wedding cake Rick made for Chelsea and Kyle in August. They wanted a lot of texture in their cake so Rick designed the cake where all tiers had texture and added handcrafted feathers and large roses, which were also on the bride's dress.

cakelava.com
Here is another yellow wedding cake Rick made, just two weeks after Chelsea and Kyle's yellow and pink wedding cake above. Sarah and Pat's yellow ombre wedding cake with gold accents was inspired by the bride's pretty plumeria flower jewelry and the groom's gold cummerbund. It was a military officer's wedding and the couple cut the cake with a sword. The cake was a huge hit at the wedding and when it was posted afterwards.

Though we did a fair amount of yellow toned wedding cakes, we made an all blue cake too! One of our favorites of the year, this pretty blue cake was made by Rick for Dara and John, a couple we first met years ago. The flowers were handcrafted and took many hours to make - the whole bottom tier was covered with them and more flowers on the top tier! The Rainbowlicious cake made for a stunning cake cutting!

cakelava.com
You know it's a fun week when you get to make a cake as cute as this! Rick made the cake in late August for Chase's first birthday. Both the mouse and cake in front are made of cake. On top of it being a difficult to sculpt, the baby's father is a celebrity and that always adds more pressure. He and his wife were so kind and appreciative when we delivered the cake. We left the party feeling great, and relieved the hard work was behind us!

Kiran and Perdeep's wedding cake was delivered the same day as Chelsea and Kyle's yellow and pink wedding cake. I recall the week when Rick spent about 8 hours making all the gorgeous roses for the cascade. It looked amazing! The bride and groom were overjoyed with the cake and we thought it turned out beautifully!

Brandie and Glen's wedding cake was made the same weekend as Dara and John (blue) and Shanell and Troy's, (shown below). Rick started working on the flowers at least a week before the weddings just to have them all done in time! We previously worked with Brandie and Glen on their twin boys birthday cake and now it was their special day and we were excited to make their wedding cake. Rick's cake design for the couple combined squares and round tiers and pretty purples with silver accents. On the bottom tier was a pair of wedding rings tied with a ribbon. The cake was so lovely and we enjoyed working with our clients again!

cakelava.com
We're starting and ending Part 3 of our Review with a 4 foot tall wedding cake. Shanell and Troy's wedding cake was one of three elaborate floral wedding cakes made in a single weekend. Rick had his work cut out for him! 24 hours were spent making this one cake! For Shanell and Troy, Rick designed their cake to be covered in patterns, with bunches of large, delicate flowers. The main colors were grey and white with a vintage feel. The couple had a "TRON" themed lounge for their guests during the cocktail hour, and Rick added their monogram in a turquoise blue color, to tie in the bride's area with the groom's. We were intrigued with vintage elegance reception room and TRON inspired cocktail lounge. Sounds like a fun wedding!

In our next post, we'll wrap up 2013 with more cakes - more cars, some awesome sculptural compositions with custom figurines and of course, more wedding cakes! Please feel free to share with us your thoughts. Thank you for taking the journey with us!

2013, A Year in Review - The First Half - B.E.C., Part 1

cakelava.com
Happy New Year! Another year of cake adventures is behind us, and what a year it has been! We've already hit the ground running in 2014 and have some amazing cakes in store for our clients. Earlier this week Rick asked me if I was going to do a 2013 retrospective on the blog. Wow! was it that time already? I really enjoy writing the retrospective and we both love reminiscing about the past year. 2013 came to a close much faster than I was ready for (as did Christmas and New Years) and my Year in Review almost didn't happen. Almost...

2013 was different than any other year in our lives because it was the year our first book, Extreme Cakeovers was released. The book was released on July 9th in stores everywhere. We knew it would make for an especially hectic year since we were still making cakes for cakelava during the other 11 months. In July, in addition to our book commitments, we flew to Boston for a week, where Rick taught two cake classes at The Cake World. Because the book brought such a frenzy of excitement and anxiety to our year, we referred to the months before July as B.E.C. (Before Extreme Cakeovers) and afterwards as A.E.C.

http://amzn.to/19SmNUh

In addition to everything book-related in 2013, we were blessed with the opportunity to make some of the best cakes and most unusual designs Rick has ever done! We've included a selection of some favorites done in two groups of four parts - B.E.C., made in the months of January through June, and A.E.C., from August to December.

B.E.C.

We often reminisce about the Samoan tribal tattoo wedding cake (photo above). The groom's tattoo inspired Rick's design, which he hand painted freehand and airbrushed.

Making a fondant covered cake with ruffles that look like torn pieces of fabric in the Hawaiian humidity is no easy task, but we had a bride that desperately wanted one and Rick decided to take on the challenge. The cake looked delicate and beautiful in person and was a nice change for us to do an all white cake.

cakelava.com

Sculpted Fonseca vintage 1963 Port bottle birthday cake. It looked right at home in the wine cellar nestled amongst the other bottles. The cake looked so realistic, it fooled many of the guests!

There is a beautiful, touching story that accompanies these two football helmets made for a Super Bowl party. Our client ordered the cakes for her birthday and decided to have them donated to a local emergency shelter for the teenagers to enjoy during the Super Bowl. We were thrilled to deliver the good news (and the cakes!) to the Shelter on behalf of our client, who requested her gift to remain annonymous.

Our first cake of it's type and made for a special client of ours to share with her family at their Oscar's party. Read the backstory on the cake and it's delivery here.

Rick made a sculpted USS Hawaii (SSN 776) with Diamond Head in the background, for Cmdr. Stephen Mack's Change of Command Ceremony. The cake was a huge hit at the event and upon delivery, his wife presented us with a very special coin, which you can see here.

cakelava.com

We adore our clients the Santiagos and were so honored when they asked Rick to make Ernie's 60th Birthday cake, a sculpted bust of Ernie as Mr. USA 1983! Read the full story and see photos of the man in action past and present here.

cakelava.com

We've made cakes for various family members of these clients for years and were thrilled when we were contacted right after Cameron was born, so they could book his first birthday cake! When we heard what the theme was and that they wanted to add a Hawaiian touch, Rick couldn't wait to make their cake! We thought it turned out so cute!

cakelava.com
Like several of the cakes above, we made the mermaid with a sculpted treasure chest for one of our regular clients who were celebrating both their son and daughter's birthdays together. Our cake making history with the couple started with their 3 foot tall wedding cake and a spectacular groom's cake. We've been making cakes for them ever since! The treasure chest was sculpted cake and all jewels and the mermaid were handmade. The cake took a ton of time but was oh so worth it!

cakelava.com

Another ocean themed cake made B.E.C. was this striking cascade of colorful edible shells. Rick made the cake for a Sweet 16 beach themed party.

cakelava.com
In Hawaii we're surrounded by ocean and get a fair amount of requests for cakes in that theme. This was Rick's first scuba diver looking into a cave birthday cake. The cake was ordered as a gift to a marine biology major who loves to scuba dive. Every piece on the cake was made by hand and Rick estimated 4 to 5 hours were spent just on the diver and cave.

On our next post, we'll explore Part 2 of 2013 B.E.C. We have many more fun cakes to share!

Non-Traditional Wedding Cakes: Sayo and Torrell's Okinawan Theme

cakelava.com

Like Heather and Joe's sculpted Jeep wedding cake, Rick and I were excited about Sayo and Torrell's non-traditonal wedding cake idea from the time we got the order. The bride Sayo is from Okinawa, Japan, and the couple have history there together, so they wanted to honor her culture and their special place with a design inspired by the exquisite Shuri Castle (shown below). We learned from the couple that the male and female Shisa lion-dogs guarding the castle were important to them and they asked Rick to include them in his design. There are photos of Shisas on the internet and their appearance varies greatly. Some are more serious and others take a lighter, more humorous approach, which was the couple's preference for their cake. We were given a small figurine for reference but Sayo and Torrell left the actual faces up to Rick - as long as they were fun and represented a male and female Shisa.

Since the cake was for a wedding, Rick decided to make the cake stacked and symbolic of, rather than a precise architectural representation of Shuri castle. The two Shisa figures were placed on top of the roof, and became custom cake toppers. Traditionally, the Shisa's are either placed on people's rooftops or in front of their gates, to protect from evil spirits. The left Shisa has a closed mouth and the right Shisa has their mouth open. The female (bride) Shisa has a closed mouth, to keep good spirits in, and the male (groom) Shisa has an open mouth, to ward off evil spirits.

Their wedding cake brought together Sayo and Torrell's experiences in both Okinawa and Hawaii. They chose tropical flavors - coconut and mango to serve their guests. This non-traditional wedding cake inspired us creatively and also taught us a lot about the Okinawan culture.

Shuri Castle, Okinawa, Japan

In our next post, we have another non-traditional wedding cake to share. It is a striking sculpted figure that will be instantly recognizable, made for an NFL player and his wife for their vow renewal!

Alex's 40th Birthday Art Cake

cakelava.com
As a cake designer, Rick's specialty is custom art cakes.  He has a background in fine art and pastry and loves sculpting, hand painting and airbrushing on cakes. For Alex's 40th birthday, Rick employed some of his favorite art techniques to make an unforgettable, truly personalized cake for a man we greatly admire and who, along with his lovely wife Yvonne, is one of Hawaii's top wedding vendors.  Alex and Yvonne own two companies, Yvonne Design and Mood Event and they have been wowing us and our clients with their amazing talent for years! Just look at their websites and you'll see what we mean! Alex is a man of many interests and one he is most passionate about is competitive running, which is the area we focused on for his cake.

When Yvonne ordered the cake for Alex's surprise birthday party, we knew the cake needed to be fantastic! It was for Alex G, afterall! The cake would be sculpted with a running theme, and a custom figurine of Alex on a woodsy trail about to cross the finish line of his 40 K. The idea of 40 K trail worked great since it was close to the length of an actual marathon and also represented Alex's big birthday! Rick studied many photos of Alex when he was making the figure and spent quite some time getting everything just right. We both felt the pressure of creating a likeness of someone everyone in the wedding industry knows and who we greatly respect!

The cake was a huge success! We received compliments from Yvonne and Alex and their guests. We attended the party as guests, and were very impressed at how beautiful everything looked! The party was brilliantly designed by Yvonne and the Mood design team - even Alex unknowingly contributed to making his own decor.  The party was filled with Alex's favorite things and different aspects of his life that would be honored in some way. Guests dined on Alex's favorite foods and for dessert, the awesome cake in his favorite flavor, Peanut butter and chocolate, an unbeatable combination that makes my mouth water just thinking of it! Happy Birthday, Alex G. It was an honor to immortalize you in cake!

A Stroll Down Memory Lane - 2011, Part 1

photo: Christie Pham Photography

It's been a few months since our last "Stroll Down Memory Lane" post. I purposely paused the retrospective after the year 2010, knowing 2011 would require a lot of time to write. 2011 changed our lives in incredible ways! The single biggest event that year was our book deal for EXTREME CAKEOVERS with our publisher, Clarkson Potter. Then all the hard work began! Also that year, Rick began teaching his "Discover Your Inner Artist" classes with his first stop in Canada. The classes were arranged the previous year, long before a book was on the horizon. After returning from Canada in in the Spring, we immediately started the book.

In 2011, we received the coveted "Best of HONOLULU" award for "Best Custom Cakes" by Honolulu Magazine, and Rick's wonky cake was selected for the cover, which were thrilled about! The Hard Rock Cafe Waikiki had its grand opening party which Rick made an outrageous Tiki themed cake for. The year was also full of photo shoots. Just when one was ending, another was starting. We still look back and don't know how we did it all - juggling cake orders, working on the book, traveling to teach, and trying to maintain a blog! It was a crazy, nonstop year of 13 hour workdays. We discovered what we were really made of!

Before all the craziness began that year, we were "just" making cakes, which we've done quite happily for the previous 6 years we were in business. In fact, it is hard to imagine not making the cakes for clients. It brings tremendous satisfaction and keeps the creative juices flowing, and one of the reasons we chose to accept orders while working on the book. We've selected some of our favorite cakes from that year to share with you.

In January 2011, Rick made the gorgeous wedding cake (above) shown next to its inspiration piece, the bride's designer Anne Namba gown. It is one of our favorite wedding cakes ever! The client also ordered a sculpted cat groom's cake pawing a 3-tier wedding cake.

Less than a week after this wedding, Rick made a sculpted Snoopy cake driving a race car for a birthday party. It was all made of cake and took quite some time to make!

A Stroll Down Memory Lane - 2010. Part 2

We're continuing our retrospective of a selection of cakes made in 2010. If you missed yesterday's post of Part 1, you can read it here. Yesterday, we ended with a black, white and gray tattoo inspired wedding cake and today we are starting by showcasing a cake that is predominantly black and white and equally as unusual.

Katie and Chuck's "Dia de los Muertos" (Day of the Dead) themed wedding cake was one of our most memorable cakes of the year! The artistic, detailed "Day of the Dead" theme was a cake dream request for Rick. We have always been fond of "Day of the Dead" themed art and we jumped at the opportunity to make it for Katie and Chuck! They had a black and white wedding with red roses, and the couple wore black, not white at the wedding. Rick was given carte blanche on the design, and the result was an amazing cake with extremely intricate detailing, all done freehand, with handmade bride and groom skull cake toppers reminiscent of the sugar skulls commonly found in "Dia de los Muertos" celebrations. The cake took a lot of time to make, but Katie and Chuck were worth it and their cake was a big hit at the wedding!

A Stroll Down Memory Lane - 2010. Part 1

2010 marked our 5th year in business, and was a turning point for cakelava. We began having a larger presence in the media, and Rick received his first invitation to teach classes in the early part of 2010. He was shocked and honored when he was asked to teach in Canada the following year and excited to to share his craft. He always wanted be able to give back to other decorators, as his mentors had done for him and this was a perfect opportunity to do it.

Rick and his assistant Annie's "Spongebob Birthday Cakes" Challenge on Food Network aired in April 2010, on Easter Sunday. It was an Easter Sunday we will never forget! Despite it being a family holiday which prevented people from attending our viewing party, we still had more than 100 guests in attendance who were there to support us and cheer Rick on! Around the time the episode aired, the media was often at our shop, filming Rick as he was making cakes and doing interviews.

It was a very interesting year for us. Hawaii started feeling the effects of the recession around this time, and there were less "destination" weddings - non-residents coming to Hawaii - and those that did often had smaller guest counts because some of their guests had lost their jobs or they couldn't afford to take such an expensive trip. In general, I think it was difficult time for many people in the cake industry, and we knew many people who shuttered their doors, which is always heartbreaking. We had counted our blessings we had a solid reputation by that time and was still getting regular business. Maybe as not as much as before, but considering the time, we were extremely fortunate.

As I reflect on 2010, I think of that year as the "end of the innocence" - not that life was so easy in the previous years, owning a business never is, but it was the last year we would focus solely on making cakes for clients. Early in 2011, Rick started teaching and began receiving more offers for other locations. Our traveling started and would become a big part of our lives in the coming years. We also got an amazing book deal for "Extreme Cakeovers" with Clarkson Potter in 2011, and would then balance the writing of the book with cake orders and teaching gigs. I remember at particularly hectic times of our lives in the last couple of years that we would reminisce about the days when we would "just make cake." Now, we wouldn't trade the opportunities we've had for anything in the world, but it demanded a level of commitment to our business that we never imagined!

I have chosen the cakes below as a sampling of some of our favorite designs that year. There were so many more I would have liked to include but couldn't for lack of time. We hope you have been enjoying the retrospective!

Rick was excited to try out these shapes for Laura and Oliver's wedding cake. The couple was married at Lanikuhonua, a gorgeous outdoor location on Oahu. Rick handpainted their cake to resemble the beautiful graphic motif from their wedding invitation. I was really smitten by this cake and loved how stylish and unique it looked. Luckily, so did Laura and Oliver!

A Stroll Down Memory Lane - 2009. Part 3

When I had the idea about doing a cakes retrospective for cakelava dating all the way back to our humble beginnings in 2005, little did I know how much effort would be involved with the writing and cake selection process. Was I crazy to think that with well over 1000 cakes in our history it would be easy to choose a representative sampling? Clearly, I didn't think about it, I was driven by the desire to look back and appreciate how far we've come, and to share some cakes we are proud of with new people who may not be familiar with the designs.

For 2009, I had an especially tough time choosing cakes to feature so I divided it into three parts. You can read Part 1 and Part 2 if you missed it.

Rick designed this beautiful wedding cake with wrapped layers and handcrafted cherry blossoms for an outdoor wedding at Kualoa Ranch in May. The cake was featured in a number of magazines and in the book "1,000 Ideas for Decorating Cupcakes, Cookies & Cakes". The gorgeous photo is by Frank Amodo.

In 2009, a number of our good friends were married and some celebrated significant birthdays with a cakelava cake. This sushi cake was made by Rick for our friend Melissa for her 40th birthday party and gifted to her by her boyfriend as a surprise. Like us, they are huge fans of sushi. Rick made and placed sushis all over the cake. A few years later, Rick would teach students how to make the sushis on a sculpted platter for one of his classes. This exquisite photo is by Robert Bruce Ayres.

We've adored this cake for years! I like the vintage look of the flowers and bands around the tiers, and the muted tones used throughout. The bride Krista sent us the custom made bird toppers, we thought they were beautifully made and so cute! I wrote a post about this wedding cake back in October 2009 that covers the cake, including the types of flowers, in more detail.

It's no secret. Rick has a great appreciation for Hawaiian tikis and has been including them in his designs for years. I love them too. We even chose "Tiki's Grill & Bar" in Waikiki to have our viewing party for the Food Network "Spongebob" Challenge. He made this sculpted tiki out of cake for a couple's 17th anniversary celebration. We were both really happy with the way the standing tiki head turned out, and it remains one of our favorites.

By the time Rick had made the Tiki cake shown above, we were already in discussions with Food Network for an upcoming "Challenge" TV show they wanted to cast him for. When Rick found out they wanted him for "Spongebob Birthday Cakes", we both just about died! We were so excited for this particular challenge because we are huge fans of Spongebob Squarepants and it was a sculpting challenge - right up Rick's alley! For the competition which would take place in December, the competitors were asssigned one of the characters as their main character. Rick was given Spongebob, which we were both thrilled about! It was his first time on "Challenge" after numerous efforts to try and get out there to do them, and he had to compete against "Challenge" Veterans - Lauren Kitchens, Bronwen Weber and Kristin Davison - which added to the pressure!

In an ideal world, we would have uninterrupted time to prepare for such an important competition, but we had too many cake orders to fulfill during that time. Rick had very little time to prepare for his Challenge. He sketched his design, made Spongebob once, secured his assistant, Annie Welch, who he had worked when he was making cakes in Seattle. Once he was cast, we began noticing Spongebob EVERYWHERE, and took trips to Toys 'R Us to look at Spongebob items.  Many emails, and forms to sign later, we were on a plane to Denver to shoot the competition!

The photo above was taken at the studios where "Challenge" was filmed. The production company had just moved into a brand new studio and we would be one of the first to use it. After a very LONG day with what felt like an equally long deliberation by the judges, including a Nickelodeon representative, the competiton ended and we flew back to Hawaii. Food Network still airs the episode from time to time and I will leave the result of the competition a mystery, in case you haven't seen it. It was a nail biter and a very close competition, and so much fun to watch!

Rick and his assistant Annie Welch standing proudly next to their creation! The competition occurred shortly before Christmas and would be aired in April 2010. It was the third longest, most agonizing wait we've had in our cake career, the second being the casting for another Food Network show. The longest wait we've had, well, we are still experiencing it and have been for the past year and a half! The wait for the Food Network shows was agony, but multiply that intensity by at least ten, adding in excitement we can barely contain, and this is how we feel about the wait for our book, "Extreme Cakeovers". It will finally be released by Clarkson Potter/Random House in July!

The next posts will cover 2010, which was another great year for cakes and media, and a turning point for cakelava, leading us down some new avenues.

Since our Stroll Down Memory Lane started, a number of you have recognized your cake and it has meant a lot to hear from you! Whether we have made your cake or are just enjoying the view, we would love to hear if you have a favorite cake, or anything else you want to share with us about the cakes.

A Stroll Down Memory Lane - 2009. Part 2

Yesterday we continued our stroll down memory lane, remembering a selection of cakes made at cakelava during the year 2009. If you missed it, you can view it here. A number of cakes shared in yesterday's post could be categorized into a common theme. Today's cakes cannot be categorized.  A great example of this would be the sculpted turtle hugging a cupcake, which Rick made for a wedding in June 2009, and is shown below.

It was one of our most unusual requests, a cute sculpted turtle hugging a cupcake. Rick and I were both intrigued by the idea when our clients told us this is what they wanted for their wedding cake. The bride and groom had a huge sweet tooth and had planned their wedding around a sweets and candy theme, which included sculpted giant cupcakes on the tables as centerpieces, which Rick also made. Their adorable turtle with a cupcake wedding cake was a huge success and circulated around the internet where the wedding was featured several times, including cakelava.com. The awesome photo is by Stephen Ludwig.
